John Barth, Director of Food & Beverage, believes food should be both functional and experiential. “We tailor meals for the individuals,” he says. “What are they looking for at that moment? What’s going to hold them back, and what’s going to give them more energy?”

“Build-your-own charcuterie boards are a lot of fun,” shares Barth. “We lay out all the cheeses, meats, nuts, jams… give them a little platter and show them how to make salami look like a rose. It’s fun, interactive, and gets people talking.”

He adds, “We also do mocktail mixology—add fresh berries, yogurts, cumin, thyme… all healthy ingredients they can use to customize a smoothie or drink. It’s not just fun—it’s nourishing.”

“We’re all farm-to-table here,” says Barth. “We work with a local produce company that does amazing things with mushrooms and tomatoes. And we tailor each menu based on guest preferences and dietary restrictions.”

From flourless chocolate cake to allergen-aware entrées, the commitment to guest wellbeing is evident in every bite. “It’s all about protecting our guests and making sure they feel supported,” he adds.

A Wellness Dinner to Remember

One of our favorite events? A wellness-themed dinner hosted for a corporate retreat focused on performance and recovery.

Highlights included:

  • A multi-course menu built around anti-inflammatory ingredients and adaptogens
  • Functional mocktail pairings designed to support focus, relaxation, and digestion
  • A guest nutritionist who shared short talks between courses
  • A soothing ambiance with live acoustic music, aromatherapy, and soft lighting

“We did a wellness clinic that started in the spa with yoga and sound baths,” Barth recalls. “Then we carried it over to food and beverage, focusing on lean proteins and ingredients that make you feel good. One of our chefs who’s into nutrition explained the menu—where things came from, why it mattered.”

He adds, “Everything’s organic. Farm to table. It’s exciting that what we serve is grown locally and brought straight to us—no third party. We get to nerd out about the fun parts of living and sourcing in Vermont.”

The result? A dining experience that felt more like a multisensory wellness journey, and a powerful reminder that nourishment goes far beyond calories.
